The headline of this article, “Rhode Island consumers warned to avoid Health is Wealth products because of botulism concerns”. caught my eye because my biggest concern is the food poisoning caused by inadequate or inappropriate processing to destroy bacteria. Failure to process low acid foods at the higher temperatures and for the longer times required for the destruction botulinum toxin is something that I see too often.
